Adénzia White Wine

 

vinification: grapes are cooled down to 8°-10° C before going through the crusher-destemmer first and a soft wine press after. The must is subsequently separated and decanted via static sedimentation at low temperatures.

ageing: 5 months sur-lie maturation at temperature controlled conditions. 5 months in stainless steel vats and at least 2 months bottle ageing.

Vinification: The grapes are removed from the bunch stems and gently pressed. Maceration begins during fermentation; modern technology ensures the best extraction of colour and the important tannins. Clarification takes place partly in steel casks ( 50% of the wine) and partly in barriques (50%), and then continues after bottling.
 
Alcohol content: 13,5 % vol
 
Food pairing: Full,higly characterful with enveloping tones of aromatic herbs, sweet peppers, leather, red-berry fruits and dried fruits.
Excellent with: roasted white meat, braised meats and semiripened cheeses.Serve at 16°C.

Vinification: The grapes are removed from the bunch stems and gently pressed. There is a brief period of maceration, followed by the controlled-temperature fermentation process. Clarification takes place entirely in stainless-steel vats.
 
Alcohol content: 13,5 % vol
 
Food pairing: Full, fresh and lingering with domination notes of ripe strawberries and plums, accompanied by spicy notes of nutmeg and chilly. Excellent with: risottos or pulses, or with ripened  or semiripened cheeses. Thanks to its freshness, when served at 12°C it is excellent with fish dishes as fish soups, tuna or sword fish.

Height of area: 480 m ASL
Vinification: Gentle pressing of the grapes followed by fermentation both in steel vats and small oak barrels (barriques), where the wine is aged sur li euntil June of the following year. After bottling, the clarification process continues for a further 3 months.
 
Alcohol content: 14 % vol
 
Food pairing: Elegant and intense with notes of tropical fruits, white-fleshed fruit, and light notes of  hawthorn blossom; delicately spiced.
 
Excellent with: rich, soft first and second course meals, such as risotto, shellfish, white meat etc.
