Adénzia White Wine

 

vinification: grapes are cooled down to 8°-10° C before going through the crusher-destemmer first and a soft wine press after. The must is subsequently separated and decanted via static sedimentation at low temperatures.

ageing: 5 months sur-lie maturation at temperature controlled conditions. 5 months in stainless steel vats and at least 2 months bottle ageing.

vinification: traditional red wine vinification with skins maceration for a period of 15-20 days at temperature controlled conditions.

ageing: 12 months in tanks made up of stainless steel and French oak wood and at least 6 months bottle ageing.

 

“It has an intense and aromatic persistent perfume with scents of spices, mature blackberries and vanilla notes; Its flavour is warm, full bodied and well structured, slightly tannic, with a smooth ending. It can be aged for a period of 5-7 years.”

Vinification: The grapes are removed from the bunch stems and gently pressed. There is a brief period of maceration, followed by the controlled-temperature fermentation process. Clarification takes place entirely in stainless-steel vats.
 
Alcohol content: 13,5 % vol
 
Food pairing: Full, fresh and lingering with domination notes of ripe strawberries and plums, accompanied by spicy notes of nutmeg and chilly. Excellent with: risottos or pulses, or with ripened  or semiripened cheeses. Thanks to its freshness, when served at 12°C it is excellent with fish dishes as fish soups, tuna or sword fish.

It comes from the process of vinification of “nerello mascalese” grapes  that  macerate  for  a  long time, keeping under control the temperature. After 18 months inside a “barriques” of french oak, the  wine  improve  its  taste  in  bottle (at least 4 months).
 
Arcuria  has  a  ruby colour, it is robust and well structurate, its tannins are smooth and its flavour is elegant and persistent, with a bouquet and fruity aroma.
 
This wine goes well with: roast meat, game and cheese.
